这是因为鸡鸭的祖先的运动量不同。肌肉中肌红蛋白的含量受遗传因素的影响。鸡的祖先是原鸡。原鸡虽然能飞，但是它们并不爱飞，也不迁徙。只有在危急时刻，原鸡才会飞起来。因为不需要长时间的持续飞行，原鸡肌肉中不含大量的肌红蛋白。而家鸡遗传了原鸡的肌肉和肌红蛋白的含量，所以，鸡肉看起来就是粉白色的。

而鸭不同。大部分家鸭的祖先是都绿头鸭。绿头鸭是迁徙的鸟类，每年都需要飞行数千公里。这样，绿头鸭的肌肉中就含有大量的肌红蛋白以便让它们能够长时间的持续飞行。虽然如今家鸭已经不飞了，但是它们依然遗传了祖先的肌肉和高含量的肌红蛋白。所以，鸭肉的颜色就比较红。

【结语】
因着肌红蛋白含量的不同，所以肉有着不同的颜色；而鸡鸭因为祖先的运动量不同，至今，它们的肉的颜色也不同。厨房里藏着很多大学问，科学就在我们身边。
