3,将鱼肉用厨房纸吸干水分,在鱼尾处开一道刀口,深至鱼骨,刀与案板平行,从鱼尾刀口处贴着鱼骨、鱼排用刀尖由鱼尾向鱼头方向轻划,将整个鱼背划开,刀沿着鱼排(鱼刺)将整片鱼肉剔下来,翻面同样方法将另一面鱼肉剔下;
